Lions set to host their annual senior picnic

The Marlboro-Milton Lions Club will once again host its annual Senior Picnic at the Community Center on Thursday, Aug. 6, at noon at the Town of Marlborough Community Center. The picnic is open to Town of Marlborough residents 60 years of age and older. A limited number of takeout meals will be available.

The menu includes barbecue chicken, hamburgers, hot dogs, baked potatoes, corn on the cob, salad and dessert. No reservations are required. Please note the new location at the Town of Marlborough Community Center. Anyone interested in volunteering to help with the picnic may contact Lion Steve Jennison at 845-489-8350.

The Town of Marlborough Recreation Committee invites everyone to another evening of free summer entertainment during the Summer Concert Series on Friday, July 17, at Cluett Schantz Memorial Park. The park opens at 6 p.m., with music beginning at 6:30 p.m.

The evening will feature the Carrie Zazz Band and Jennie Angel & The Outlaws, with the national anthem performed by Dusti Gallo. Food and refreshments will be available from Benmarl Winery, Bobby’s Brick Oven Pizza, Cousins Maine Lobster and License to Chill Ice Cream. Bring lawn chairs, blankets, family and friends for an enjoyable summer evening.

School News
The Marlboro Central School District recently welcomed Jessica Torok as its new assistant superintendent of instruction.

The district has also named Alicia Gannello as the new principal of Marlboro Middle School. Residents can learn more about Gannello and her background by visiting the district website.
St. Mary’s Church

There are many daily openings available for Mass intentions at St. Mary’s Church. A Mass may be offered in thanksgiving, for a special intention such as a birthday or anniversary, or for the repose of the soul of someone who has died. While all weekend Mass intentions for 2026 have been filled, many weekday openings remain. The 2027 Mass book will open in mid-September, with the official opening date announced in the parish bulletin at the end of August.

Marlboro Free Library
Adults are invited to add some sparkle to their summer reading during Book Bedazzling on Thursday, July 23, from 6 to 8 p.m. at the Marlborough Community Center. Participants should bring their own book and decorate the cover with rhinestones, gems and other embellishments. Registration is required for this free program.

The library’s Walking Club continues on select Wednesdays from 9:30 to 10:30 a.m. The July 29 meeting location will be announced one week before the walk. Participants are encouraged to RSVP to receive weather-related updates.

Weekly Recipe
Poor Man’s Casserole – Jeanne F
Ingredients:
• 1 pound ground beef
• 4 medium russet potatoes peeled and thinly sliced.
• 1 medium onion thinly sliced.
• 1 (10.5 oz) cream of mushroom soup
• 1 cup milk
• Salt and black pepper, to taste
• Optional: 1 cup shredded cheddar cheese for a cheesy topping

Directions
Prepare the Filling
Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
In a large skillet over medium heat, cook the ground beef until browned, breaking it into crumbles as it cooks. Drain any excess grease and season lightly with salt and black pepper.
Make the Sauce
In a medium bowl, whisk together the cream of mushroom soup and milk until smooth and well combined.
Arrange half of the sliced potatoes in an even layer in the prepared baking dish.
Top with half of the browned ground beef and half of the sliced onions. Season lightly with salt and pepper.
Repeat the layers with the remaining potatoes, beef, and onions.
Pour the mixture of soup evenly over the casserole, making sure it reaches all the layers.
Bake

Cover the dish tightly with aluminum foil. Bake for 1 hour, or until the potatoes are fork tender.

Remove the foil during the last 10–15 minutes of baking to lightly brown the top. If desired, sprinkle shredded cheddar cheese over the casserole before uncovering for an extra cheesy finish.
Let the casserole rest for 5–10 minutes before serving to allow it to set.
Upcoming Events

The Heart of the Hudson Valley Farmers Market continues every Saturday through early October from 9 a.m. to 2 p.m. at Cluett Schantz Park, 1801-1805 Route 9W in Milton.

Senior Fellowship Suppers are held from 3 to 5 p.m. at Christ Episcopal Church, located at the corner of Route 9W and Old Post Road in Marlboro. Remaining summer dates are July 19, Aug. 23 and Sept. 13.

Don’t forget Country Night at the Summer Concert Series on July 17, beginning at 5:30 p.m. at Cluett Schantz Memorial Park. Jennie Angel and the Outlaws will open for the Carrie Zazz Band.
