New bistro coming to Montgomery

Brady Purcell will soon open a restaurant that will bring gourmet food to diners.

The restaurant, known as Brady’s Bistro, will operate in a spot with plenty of vehicle and foot traffic. It will be located at 1019 Route 17K, in the same plaza as Family Dollar and Carmela’s Restaurant and across the street from Walden Savings Bank.

Diners will be able to eat at the bistro seven days a week from 6 a.m. to 4 p.m. The preliminary menu boasts breakfast and lunch entrees as well as salads. A variety of breakfast sandwiches are offered in addition to bagels, muffins, waffles and pancakes. The lunch menu includes many different sandwiches and wraps such as the spicy chicken sandwich and the buffalo chicken wrap. Tuscan, California cobb and classic caesar salads round out the menu.

Couches are positioned to the left of the entrance to the restaurant, so customers have a place to relax. High top seating will be at the right of the entrance. The middle of the restaurant will house tables and a coffee station will be placed against the wall on the right. The kitchen is stationed at the rear of the restaurant, in back of the service counter. A unisex bathroom will be placed between the service counter and the kitchen.

Purcell, 31, grew up in Walden, where he currently resides. Over the years he has worked at and founded a variety of different businesses. He worked as a facility service sales representative for Cintas, a company who provides specialized services to businesses. After that, he was an account executive for Interface, Inc., a global manufacturer of commercial flooring. He created North American Securities Agency, employing security guards at the Woodbury Common Premium Outlets. In addition, Purcell founded BTP Solutions LLC, which recycled carpet in New York City. Purcell is excited for the challenge of running his own restaurant.

“I’ve always wanted to own something in food,” he said. “I have always wanted to own something locally here because I really like this area. I’ve lived here for 31 years.”

Purcell chose the space on 1019 Route 17K after his mother suggested it. In addition to the amount of vehicle and foot traffic by the building, Purcell was inspired to rent the space because of its sentimental value. As a child, he used to visit the property when it was an A&P grocery store.

Now is an especially difficult time to open a restaurant and Purcell has plans to face the challenges brought forth by the COVID-19 pandemic. When his bistro opens, he will focus on delivery service. Tables will be spread out and capacity will be limited in order to ensure the safety of diners.

In time, Purcell hopes to open multiple Brady’s Bistro restaurants. Goshen and Pine Bush are two places Purcell would love to open restaurants.

“Starbucks started with one location. A lot of places started with one location,...” he said. “I think this type of thing is really trendy right now; people doing brunches, people doing gourmet types of food.”

Purcell noted that the air conditioners are being installed as well as the ceiling. He estimates that will be completed in about a week. The restaurant is slated to open in early March.
