Hibatchi Go opens on Windsor Highway

Hibachi Go, located at 334 Windsor Highway, in the old Kentucky Fried Chicken/Long John Silver’s building, opened on Sunday, Sept. 12.

The restaurant was founded by Ariel Ballor and Christopher Joseph, who attended the Culinary Institute of America in Hyde Park and graduated in December of 2016.

For Ballor and Joseph, the idea of starting this restaurant comes from their shared appreciation for Asain cuisine. Both owners note that most Hibachi establishments offer both quality food and a show concept. With the food and show, these two aspects make the overall experience expensive for customers. With this restaurant, they want to continue the idea of bringing the idea of good quality Hibachi food without the show element to make it more affordable to customers.

“This concept is new to some people,” Joseph said.

Joseph had the opportunity to travel to Taiwan during his masters program and began to become more interested in the cuisine. According to the Hibachi Go website, Ballor had the opportunity to travel to Singapore and travel around Asia, also studying and growing in her appreciation for Asian cuisine as well.

Ballor, prior to the pandemic, said she was in the process of opening her own restaurant, but before she could sign her lease, the pandemic hit. Thus that idea had to be put on hold and she decided to wait and see what the next course of action would be. While that idea was on hold, Ballor continued to work during the course of that time.

In their first two weeks in this community, Ballor and Joseph are continuing to learn the needs and wants of their customers and bring more items to the menu to offer variety in their food.

Ballor also notes that Hibachi Go is also in the process of registering for delivery apps to help spread the word and obtain more customers.
